Easy Crockpot Apple Cobbler - Fav Fall Recipe!

So.. you went grocery shopping with every intention to eat more whole & nutritious food this week. You bought all kinds of vegetables, lean meats, and tons of fresh fruit. Now it’s the end of the week and you have 6 semi-rotting apples sitting on your counter, completely untouched. Hey, it’s okay, we’ve all been there! You meant to eat an apple a day (to keep the doctor away), but you fell a little short, I can relate.


And now you’re thinking “fresh fruit is so expensive!”, and you cringe a little at the thought of having to throw out 6 (starting to bruise) apples. Girl, I am with you there! I HATE wasting food!! I was in this exact same scenario over the weekend, so let me tell you my secret on using those apples you forgot to eat during the week.


INSERT EASY CROCKPOT APPLE COBBLER! Yep, you’ve got it! We’re turning those bruised up apples sitting on your countertop into a delicious dessert that can be enjoyed soft & warm right away out of the crockpot, OR cold & crispy later on out of the refrigerator. Now, let’s get to cookin’!


For the apples you will need: 6 medium apples of your choice. I had honey crisp, so that’s what I used. For a more tart tasting cobbler, you may want to use Granny Smiths! 1/4 cup brown sugar. 1 teaspoon cinnamon. 1/2 teaspoon nutmeg. 1/4 tsp ground cloves (optional).


For the topping you will need: 1 1/2 cup oats (preferably NOT quick oats, but that’s all I had on hand. I’d recommend using old fashioned rolled oats if you can). 1 cup all purpose flour. 1/4 cup brown sugar. 1 tsp cinnamon. 1 1/2 stick butter, cold & cut into pieces.



First you’re going to core & peel the apples. You can leave the skin on if you really want to, but from my experience, no one likes chewy cooked apple peels in their cobbler!



Next, in a large mixing bowl combine your apples, brown sugar, cinnamon, nutmeg & cloves. Toss with your hands until the apples are evenly coated, then transfer the apple slices into a crockpot that has been sprayed with non-stick cooking spray. Can you believe it, we’re almost done already!



Now we’re going to use the same mixing bowl as before to make our apple cobbler topping! Combine the oats, flour, brown sugar, cinnamon, and cubed butter. Use your hands, if you don’t mind getting messy, or a pastry cutter to cut the butter into the dry ingredients until pea sized pieces of butter remain throughout the mix. If you don’t have a pastry cutter, don’t panic! Using your hands works just as well, and is way more fun! Once your topping is mixed together, gently spread it on top of the apples. DO NOT mix into the apples!



Place a kitchen towel under the crockpot lid & cook on LOW for 3 hours with the towel in place. After 3 hours, turn the crockpot off and let the cobbler sit for 1 hour before serving. The towel helps absorb moisture and keeps the cobbler topping from becoming too moist.



And there you have it! Easy crockpot apple cobbler made from the apples you forgot to eat throughout the week (not a bad mistake, if you ask me!) My husband and I love ours warm with a scoop of vanilla ice cream, but it’s also delicious cold! ENJOY!




EASY CROCKPOT APPLE COBBLER:


INGREDIENTS:


Apples

*6 large apples

*1/4 cup brown sugar

*1 tsp cinnamon

*1/2 tsp nutmeg

*1/4 tsp ground cloves (optional)


Topping

*1 1/2 cup rolled oats

*1 cup all purpose flour

*1/4 cup brown sugar

*1 tsp cinnamon

*1 1/2 stick butter, cold & cubed


DIRECTIONS:


1) Spray crockpot with non-stick cooking spray. Skin & core apples. Cut apples into slices about 1/4 inch thick.

2) In large mixing bowl, combine apples, brown sugar, cinnamon, nutmeg, and cloves. Toss with your hands until evenly coated. Transfer apples to crockpot.

3) Using same mixing bowl, combine oats, flour, brown sugar, cinnamon, and cubed butter. Using hands or pastry cutter, cut the butter into the dry ingredients until only pea sized pieces of butter remain. Gently spread oatmeal topping over apples.

4) Place kitchen towel under crockpot lid and cook on low for 3 hours. Turn crockpot off after 3 hours, and let cobbler sit for 1 additional hour before serving.

5) Enjoy hot or cold! If eating warm, I recommend topping it with a scoop of vanilla ice cream!
